Ker Sangri is one of Rajasthan's famous traditional dishes. Also known as sukhi sabzi, each bite of this delicacy is a burst of aromatic flavours. Here's a recipe by Chef Aruna Vijay to cook it at home.

• 1/3 cup ker • 1/2 cup sangri • Water • 3 tbsp oil • Salt • 1 tsp hing • 1.5 tsp red chilli powder • 1/4 tsp turmeric powder • 1.5 tsp coriander powder • 1.5 tsp amchur powder

• Wash ker and sangri thoroughly and soak them in a bowl of water for about 7 hours.

• Also, you can directly boil them in a solution of water, salt, and turmeric powder.

• Once done, strain the excess water and add salt, red chilli powder, coriander powder, and turmeric powder. Coat ker and sangri well with these dry spices.

• Next, heat oil in a pan and temper hing. Add ker and sangri and toss nicely. Sprinkle some amchur powder and Rajasthan's special ker sangri is ready to be served.
