A lime sized ball of Tamarind 2 cups of water 1 tsp og Jeera 8 to 10 black peppercorns Some pink salt 2 to 3 cloves of garlic 1 green chilli 8 to 10 shallots some coriander stems 5 to 7 curry leaves Some more shallots 2 tsp of Jaggery Some chopped coriander

First, soak tamarind in water.

Crush salt, cumin seeds and black peppercorns in a mortar with a pestle.

Then, add shallots, green chillies, garlic cloves, curry leaves and coriander stems and crush using mortar and pestle.

Mix this freshly ground paste with strained tamarind water.
