Charred Patta Gobi  With Coconut Curry 

Chef Saransh Goila recently shared this Charred Patta Gobi With Coconut Curry recipe on his Instagram. This cabbage has a caramelised and smokey flavour and looks too good to ignore, so try it out right away!

Ingredients

1 patta gobi Oil Mustard seeds Curry leaves Green chilli Madras onions Garlic cloves Fresh coriander Curry leaf podi Tamarind pulp Sesame oil Jaggery Red chilli powder 1/2 cup coconut milk

For Charred Patta Gobi

1. Take one patta gobi and cut it into 4 pieces & wash it with salt water. 2. In a pan, take 1 tbsp oil and add 1/2 tsp of mustard seeds, a few curry leaves, and 1 green chilli to it. 3. After that, add the patta gobi to it and mix it well.

Follow These Steps 

4. Then, add some peeled Madras onions & garlic cloves to the pan & toss it well. 5. Now, cover with a lid & cook for 8-10 mins until cooked. 6. Flip & cook the gobi on the other side. 

Make The Sauce

7. In the meantime, take some of the charred onions & garlic from the pan and put it in a blender. 8. Then, add a handful of fresh coriander, 2 tbsp of curry leaf podi, 3 tbsp of tamarind pulp, 2 tbsp of sesame oil, and 1 tsp of jaggery to it and blend. 9. Add some of this sauce onto the gobi & cook well from both sides. 

Coconut Curry Recipe

10. Now, take 1 tbsp of oil in another pan & add 1/2 tsp of mustard seeds, curry leaves & 1 tsp of red chilli powder to it. 11. Add the leftover sauce to it & cook for 4 to 5 mins.

Bring It All Together

12. Add 1/2 cup of coconut milk to the pan and mix well 13. Cook till the curry thickens. 14. On a plate, place the charred cabbage and add the thick coconut curry sauce to it.
