If you have been to Puri, you must know the immense popularity of delicious khaja. You can easily make these yummy sweets at home following a recipe by Pratima Pradhan (@thecookingamma).

• 4 cups all-purpose flour • 2 tbsp ghee • 2 tbsp cardamom powder • 1 tbsp salt • Oil • Water To make syrup: • 2 cups sugar • 1 cup water • 3 cardamom pieces

• The first step to prepare khaja is to make a soft dough. Knead all-purpose flour with ghee, cardamom powder, salt, and water.

• Next, make sugar syrup by adding sugar to a pan and pouring water. After a few minutes, add cardamoms and cook till sugar dissolves and a thick sugar syrup is ready.

• Make small balls, dust them in maida, and roll them. Next, layer a flattened dough ball with oil and maida and place another flattened dough ball on top. Follow this step till you form a stack of a few layers and form like a cylindrical roll.

• Cut them in small sizes and roll these pieces gently to get khaja-like shapes.

• Deep fry them for a few minutes till you get the desired golden-brown colour.

• Dip khaja into the sugar syrup for a few minutes.
