Boiled Rice Water Curd Onions Coriander Leaves Green Chillies Mustard Oil Mustard Seeds Salt

Boil your choice of rice. Remove the excess water and take out the rice in a container.

Add clean water to the boiled rice. It should be completely submerged. Keep it overnight in the fridge.

The next day, take it out and let it cool down a bit. Then add freshly beaten curd to it. Mix well.

Now add freshly chopped onions, green chillies, coriander leaves, and salt (as per taste) to the mixture and give it a good stir.

Next, temper it with a little bit of hot mustard oil, mustard seeds and kadi patta (optional).

Mix it well, serve and enjoy Madhavan’s favourite Kanji at home!
