Chef Karan Gokani (@karancooks) shared an easy and delicious recipe for Bombay Frankie on Instagram and here’s how you can make it at home.
4-5 boiled potatoes 1 tbsp oil 1 tsp cumin 1 small chopped onion 1 tsp ginger-garlic paste ¼ tsp turmeric ½ tsp chilli powder ½ tsp coriander powder ½ tsp cumin powder 2 tbsp ketchup 1 tbsp chaat masala Chopped coriander Lime juice Salt Green mint chutney Tamarind chutney Paratha/Roti/Tortilla
1. In a pan, fry the cumin seed with some onions and ginger and garlic paste.
2. Once softened, add all the spices and cook for a few seconds. 3. Add some ketchup.
4. Now, add boiled, mashed potatoes, coriander, chaat masala, salt, and a splash of water. 5. Mix well and take it off the heat.
6. On a pan, take a little oil and fry the potato mix to make a patty.
7. Layer your roti/paratha with the chutneys and place the aloo patty on it. 8. Then, top it with some chopped onions, coriander, chillies, and some chaat masala.
