Chef and content creator Nehal Karkera has a recipe for Chicken Mapusa. This is a delicious Mangalorean curry.

For Marination (Optional) • 500g of curry-cut chicken • 1/2 tsp of turmeric powder • Salt For Masala • 2-3 tbsp of coconut oil • 1 tbsp of crushed ginger • 1 tbsp of crushed garlic • 1 large-sized onions, sliced • 10 shallots, sliced • 2-3 green chilies, slit • 1 sprig of curry leaves • 1/2 tsp of turmeric powder • 2 tsp of coriander powder • 2 tsp of fennel powder • 1 1/2 tbsp of vinegar • Salt, to taste • 1 cup of water • 1/2 cup of coconut milk For Tadka • 3 tbsp of coconut oil • 1 sprig of curry leaves • 1-2 green chilies, slit • 1 small onion, sliced • 4-5 small shallot, sliced

Heat coconut oil in a kadai and then add crushed ginger, garlic, onions, shallots, curry leaves and green chillies. Fry till the onions brown.

Then, add the spice powder and toast the spices. Finally, pour the vinegar and let it cook.

Then, add the chicken to this masala and let the chicken cook in its own juices.

Pour the coconut milk and let the gravy thicken.

Make a tadka of slit green chillies, curry leaves, sliced onions and shallots. Top the chicken curry with the freshly made tadka.Your Chicken Mappas is ready. Enjoy with dosas or rice.
