Start by dry roasting garlic cloves, green chillies, and peanuts in a pan until they are crisp and aromatic.

In a mortar and pestle or grinder, coarsely grind the roasted garlic, chillies, and peanuts with fresh coriander leaves and stems. Add salt to taste.
Take your paneer cubes and generously coat them with the freshly made thecha mixture. Ensure each cube is well-covered.

Heat a non-stick pan over medium heat and add a little oil.

Place the thecha-coated paneer cubes in the hot pan. Fry them for 2-3 minutes on each side.
