We Asked A Telugu Woman To Share A Recipe For Junnu, A Traditional Dessert Made From First Cow Milk After Birth

– 1 litre fresh cow's colostrum (first milk after giving birth) – 250 ml whole milk – 100 g caster sugar (adjust to taste) – A pinch of ground cardamom (optional) – Saffron (optional)

Thoroughly cleanse and strain the colostrum to remove any impurities.

Step 1

In a large mixing bowl, gently whisk together the colostrum and whole milk until well combined.

Step 2

Gradually incorporate the caster sugar into the mixture, stirring until it has completely dissolved.

If desired, add a smidgen of ground cardamom and a few saffron strands to enhance the flavour profile.

Heat the oil in a small pan. Add the ground mixture and sauté for 2-3 minutes. Add salt to taste and mix well.

Transfer the mixture to a greased steaming vessel and Steam the concoction for around 20-30 mins.

It should have a custard-like consistency. Allow the junnu to cool to room temperature before serving, and enjoy either warm or chilled as per your preference.
